Biscuits and gravy. And fried chicken.

There are just some days you just feel all healthy right? Take yesterday, I woke up and just felt in the mood to cook. Not out of the ordinary. But I meant cook an amazing breakfast, beyond my usual eggs and some type of meat.  My wonderful friend's favorite breakfast is a McDonald's chicken biscuit. Hmmm let me one up you McD's let's add gravy too.
I have now lived in the south for 10 yrs (well 5 permanently) and have yet to find and keep a famous biscuit recipe like you hear so many of the romanticized southern women have had "for generations." My mother, fabulous cook, always used Bisquick mix which I always felt was yummy enough. But as luck would have it I had no mix. But I did have a big carton of heavy cream because of course the store was all sold out of the smaller cartons. I have never made biscuits without butter but something told me I was in to something good. I found a cream biscuit recipe from who else but Emeril. 2 c flour, 1 tbsp plus 1 tsp baking powder, salt and 1.5 cups cream. That's it. And oh my, this recipe will get written down. Team cream biscuits all the way! The rest of the meal came together quick, standard fried chicken (with plenty of hot sauce of course) and gravy made from the trusty jar of bacon fat I keep next to my stove for just such occasions (maybe I'm more southern than I thought) with lots of pepper. Oh and fresh sliced tomato too of course, because ya know, I was feeling healthy. Just the meal I needed to start my busy day.
